It is not just the rarity of the beans that matters. Only their careful selection, expert quality control, and precisely tailored processing result in chocolates with a harmonious balance of sweetness, bitterness, and natural cocoa flavor.
Rausch and single-origin cocoa – a special connection
single-origin cocoa is the heart of the Rausch brand. Since 1918, this Berlin-based family-owned company has been dedicated to high-quality chocolate and to exploring how the unique characteristics of cocoa can be preserved and enhanced. Today, this commitment extends far beyond the production of finished chocolate bars. Rausch is deeply engaged with cocoa varieties, cultivation methods, harvesting conditions, fermentation, drying, and quality assurance. This fosters an understanding of the raw material that begins with the cocoa plant and extends all the way to the moment of enjoyment.
Rausch ’s cocoa experts regularly travel to the countries of origin, foster long-standing partnerships, and evaluate single-origin cocoa not only based on its flavor, but also on its origin and processing. This knowledge helps them properly classify the unique characteristics of the beans. After all, a high cocoa content alone does not make for exceptional chocolate. What matters most are the quality of the fine cocoa, the care taken after harvest, and the expertise used to bring out its distinctive flavor profile.
single-origin chocolate with the flavor of their origins
Each origin gives single-origin cocoa its own unique character. Climate, soil, cocoa variety, and regional conditions influence the flavors that develop in the beans. As a result, a “ single-origin chocolate ,” for example, can taste berry-like and fruity, delicately nutty, mildly caramel-like, or bold and spicy. Rausch ’s classic blends deliberately highlight these natural differences rather than masking them with a uniform flavor profile.
To achieve this, the processing is tailored to each specific single-origin cocoa . Fermentation and drying in the country of origin lay the groundwork for the chocolate’s eventual flavor profile. The next step is to refine the beans in a way that preserves their distinctive flavor and allows it to unfold harmoniously in the chocolate. The result is single-origin cocoa chocolates with a clear origin, a smooth melt, and an aromatic profile that gradually unfolds as you savor them slowly.
Artisanal Chocolate-Making Meets Cocoa Expertise
What makes the single-origin cocoa chocolates from Rausch so special is the combination of in-depth knowledge of raw materials and artisanal expertise. The quality of the cocoa beans is carefully inspected before they are processed into single-origin chocolates. Deliberately simplified recipes using as few natural ingredients as possible preserve the original character of the fine cocoa. This ensures that its delicate aromas are neither masked nor distorted. Instead, the unique notes of each origin can clearly shine through and unfold into a balanced interplay of intensity, sweetness, acidity, bitterness, and melt.
This precision defines the Rausch classics across a range of cocoa percentages. Lighter varieties showcase the smooth and creamy side of fine cocoa, while darker chocolates highlight its intense, complex notes. The result is a collection that not only serves as an introduction to the world of high-quality single-origin chocolate but also reveals new flavor nuances to experienced chocolate lovers.
Our own " single-origin cocoa" plantation in Costa Rica
Rausch ’s close ties to single-origin cocoa are evident in its own plantation, Tres Equis – Finca de Cacao, in Costa Rica. Since 2014, Rausch has been cultivating high-quality cacao there and closely monitoring its development on-site. The plantation provides the opportunity to gain a comprehensive understanding of the journey from the cacao tree to the finished bean and to incorporate insights from cultivation, care, and post-harvest processing directly into the quality assurance process.
Tres Equis is not just a place where cacao is grown. At the Rausch single-origin cocoa Institute, researchers are exploring new varieties of fine cacao, addressing key quality issues, and sharing knowledge with partners. Fermentation, drying, and sustainable farming systems are also being studied and further developed. Through this work, unique cocoa varieties can be better understood, protected, and preserved for the future. The plantation thus uniquely combines practical cultivation, research, and responsible quality development.
Enjoying single-origin cocoa mindfully
single-origin chocolate Its complexity unfolds best when savored slowly. Even a small piece is enough to appreciate its aroma, melt-in-the-mouth texture, and various flavor notes.
