Matcha Meets Master Craftsmanship

Matcha Moments: When Green Meets Chocolate

Matcha doesn't always have to end up in a cup. Its delicately tart, slightly bitter character also opens up a surprisingly versatile world of flavor when paired with chocolate. White chocolate, in particular, with its mild sweetness and creamy texture, provides an exciting contrast to the characteristic notes of matcha.

At Rausch , this combination can now be discovered in a wide variety of forms. Three different handmade bars showcase just how versatile matcha chocolate can be. The selection also includes matcha ice cream and, as the latest highlight, a filled matcha-strawberry praline ball.

Why Matcha and White Chocolate Go So Well Together

Matcha adds a subtle astringency, fresh green notes, and a distinctive aromatic depth. White chocolate complements this intensity with its melt-in-your-mouth texture and sweet flavor. Neither component is completely overshadowed. Instead, the result is a balanced interplay of creamy sweetness and subtly tart freshness.

When strawberries are added, the blend takes on another layer of flavor. The fruitiness and slight tartness of the berries lighten up the composition and create a lively contrast to the matcha. The result is a flavor that is at once sweet, subtly tart, and fruity.

Three bars, three different matcha experiences

At Schokoladenhaus Berlin, there isn't just one, but three different matcha chocolate bars. Even though they're based on similar flavors, they differ significantly in how they're made, their shape, and their flavor profile.

  • The Matcha-Strawberry Spread from the Patisserie

The first version is made right here in our in-house patisserie at Schokoladenhaus Berlin. For this handmade spreadable chocolate bar, white chocolate is infused with matcha and combined with dried strawberry pieces.

Its unique bar shape and visible pieces of fruit give it an unmistakable artisanal character. The matcha and strawberry are immediately recognizable here—not only in taste but also visually. Each bar bears the patisserie’s signature style and lets you experience the combination of creamy chocolate, subtly bitter matcha, and fruity strawberry pieces.

This pastry creation is available exclusively at Schokoladenhaus Berlin.

  • Matcha-Strawberry in the classic Rausch bar shape

The Matcha-Strawberry Bar takes the same popular flavor combination but presents it in the classic Rausch bar format. This gives it a distinct character and clearly sets it apart from the handmade spreadable bar from the patisserie.

Here, too, matcha, white chocolate, and strawberry come together. The uniform bar shape makes this creation easy to portion and highlights the balanced interplay of the three flavors. It is therefore not an alternative in the sense of a substitute, but rather another interpretation of the same flavor concept.

The matcha-strawberry bar is available at Schokoladenhaus Berlin and in the Rausch online store.

  • The Pure Matcha Bar

The third variety deliberately omits strawberries. In this bar, the combination of white chocolate and matcha takes center stage. This really brings out the subtly bitter character of the matcha, while the white chocolate adds a creamy sweetness and a delicate melt-in-your-mouth texture.

This minimalist blend is particularly well-suited for those who want to experience matcha in its chocolatey form. Without any additional fruity notes, the flavor remains clean and concentrated: sweet, subtly tart, and pleasantly balanced.

The pure matcha bar is also available at Schokoladenhaus Berlin and in the Rausch online store.

The new highlight: the matcha-strawberry praline ball

Rausch ’s latest matcha creation takes the combination of matcha, white chocolate, and strawberry in a whole new direction. Inside the matcha-strawberry praline ball, two different fillings come together: a liquid strawberry filling and a matcha milk cream with delicate strawberry pieces.

This duo is coated in white chocolate with matcha. When you take a bite, the crisp chocolate shell breaks open first. Beneath it lie the creamy matcha filling and the liquid, fruity strawberry center. The different flavors and textures alternate: melt-in-your-mouth, creamy, fruity, and subtly tart.

The praline sphere takes the familiar matcha-strawberry combination a step further. Instead of a chocolate bar, it takes the form of a multi-layered praline creation in which the individual components gradually unfold.

The new matcha-strawberry praline ball is available at Schokoladenhaus and in the Rausch online store.

Discover Matcha and Ube in Ice Cream, Too

There are also new flavors to discover at the ice cream counter at Schokoladenhaus Deli Berlin. The new matcha ice cream captures the distinctive flavor in a particularly creamy and summery form.

If you enjoy trying unusual flavors, the new ube ice cream is another special creation for you. Both flavors invite you to experience familiar moments of indulgence from a new perspective and to embrace flavors you may not have encountered before.

Matcha chocolate has many facets

Matcha is much more than just an ingredient that gives chocolate its green color. When used correctly, it adds freshness, depth, and a pleasant bitterness to sweet creations. The three matcha chocolate bars at Rausch illustrate just how varied the flavors can be.

This handmade chocolate bar from the patisserie combines matcha and strawberry with a unique, artisanal look. The Matcha-Strawberry bar reimagines this combination in the classic Rausch bar format. The pure Matcha bar focuses entirely on the interplay between white chocolate and subtly bitter matcha.

With the new ice cream and the filled matcha-strawberry praline ball, this world of indulgence is now even more diverse. At Rausch , matcha not only comes in various forms, but also reveals a new side of itself time and again.
