The result: Five new varieties are now available to complement our patisserie pralines.
This adds some truly exciting flavor combinations to the collection—ranging from surprisingly fresh to pleasantly spicy.
Patisserie Pralines: Five New Arrivals from Berlin
The flavors Dubai, Rote Grütze, Raspberry Pistachio, Cassis Violet, and Espresso Martini were already part of the selection. Now five more creations are being added:
Lime and basil, passion fruit and coconut, lemon and mint, mango and chili, and blood orange and almond.
What sometimes sounds unusual on paper suddenly makes a surprising amount of sense in a praline. That’s because the new varieties aren’t about combining the most outlandish ingredients possible. The key is balance: fruit sometimes needs a fresh counterpart, sweetness needs a little contrast, and chocolate needs something now and then to bring out its full potential.
Lime and Basil: Surprisingly Fresh
Lime and basil is definitely one of those combinations that makes you take a second look. The lime adds freshness and a subtle tartness, while the basil complements it with an aromatic, herbaceous note.
The result isn't a traditional chocolate combination—and that's exactly what makes it interesting. Fresh, clean, and a little unexpected.
Passion Fruit and Coconut: A Perfect Pair
's Passion Fruit Coconut flavor takes you to a tropical paradise. The intense, slightly tart fruitiness of passion fruit blends with the milder character of coconut.
A contrast that complements each other perfectly. Vibrant on one hand, mild and rounded on the other. Combined with chocolate, the result is a flavor that feels instantly familiar yet still has a character all its own.
Lemon Mint: Chocolate Can Be Fresh, Too
"Lemon Mint" proves that chocolates don't always have to be rich. Lemon adds a crisp, fruity note, while mint gives the creation an extra burst of freshness.
A combination that feels light while also showcasing just how versatile patisserie can be. It offers an exciting change of pace, especially when paired with richer varieties.
Mango Chili: first the fruit, then a little tingle
Mango Chili plays on two very different flavors. At first, the fruity mango takes center stage. Then the chili kicks in, adding a subtle warmth.
It's not about making it as spicy as possible. Rather, the chili adds a touch of spice and provides an interesting contrast to the sweet fruit. A praline with a little more pizzazz, but without any drama.
Blood Orange Almond: Familiar Yet New
Blood Orange Almond combines two flavors that each bring warmth in their own unique way. The blood orange is fruity, slightly tart, and full of character. Almond adds a soft, nutty note.
Taken together, this results in a well-balanced variety that’s less flashy than some other new discoveries. And that’s precisely why it has its own unique charm.

As different as the new patisserie chocolates may taste, they were all made in the same place.
At the Rausch patisserie in the Schokoladenhaus Berlin, the pralines are made fresh and by hand. There, they are filled, layered, coated, and decorated—and, above all, tasted again and again.
After all, an idea for a new variety is just the beginning. Only when the chocolate, filling, fruit, herbs, or spices work together does it become a finished praline. For us, this meticulous work is just as much a part of patisserie as the joy of occasionally turning classic notions of chocolate on their head.
From Dubai to Mango Chili
With the addition of these five new varieties, the total selection now includes ten different Patisserie chocolates:
Dubai, Red Fruit Compote, Raspberry-Pistachio, Blackcurrant-Violet, Espresso Martini, Lime-Basil, Passion Fruit-Coconut, Lemon-Mint, Mango-Chili, and Blood Orange-Almond.
Sometimes fruity, sometimes herbal, sometimes nutty, or with a subtle kick.
