The holiday season is all about twinkling lights, warmth, and the scent of freshly baked cookies. These chocolate-marzipan cookies combine a delicate chocolate shortcrust pastry with a rich, aromatic filling, and they taste divinely festive. Whether served as a delicate tea treat or on a cookie plate during Advent—they’re sure to provide moments of pure enjoyment.
INGREDIENTS
For the dough:
400 g flour
50 g whole milk drinking chocolate powder
50 g cornstarch
150 g powdered sugar
10 g baking powder
4 egg yolks
260 gsoftened butter
1 pack Vanilla sugar
For the filling:
1 package of premium marzipan potatoes
For the decorations:
100 g bar ofPeru 60% chocolate
Sugar or chocolate sprinkles
PREPARATION:
- For the shortcrust pastry, mix the flour, whole milk chocolate powder, powdered sugar, baking powder, and cornstarch, then sift the mixture onto the work surface. Use your hands to form a well in the center and add the egg yolks. Scatter the cubed butter over the flour mixture, sprinkle with vanilla sugar, and quickly knead everything with floured hands, working from the outside in, until a smooth dough forms.
- Shape the dough into a ball, wrap it in plastic wrap, and chill it in the refrigerator for about 1 hour. In the meantime, preheat the oven to 170 °C (top and bottom heat).
- Knead the chilled dough briefly, then roll it out to a thickness of about 3 mm. Cut out an even number of round cookies, and cut a small hole in the center of half of them.
- Place the cookies on the prepared baking sheets and bake on the middle rack for about 12–15 minutes, then let them cool completely.
- For the glaze between and on top of the cookies, melt the Peru 60% chocolate bar in a double boiler. First, brush the bottom of the cookies with the hole with the melted chocolate, place them on the bottom half without a hole, and let them dry for a moment.
- If desired, brush the sides of the cookies and decorate them as you like with sugar sprinkles or chocolate chips.
- For the filling, cut the premium marzipan potatoes in half and press them into the center of the cookie—and your chocolate-marzipan cookie is ready.
